Recipe | Apple strudel dumplings
Recipe from the South Tyrolean farmers
Ingredients:
- 150 - 200g breadcrumbs, coarsely ground
- 2 egg yolks and 2 egg whites
- 1 tbsp milk
- 150g apples (approx. 1.5 apples)
- 2 tbsp water
- juice of half a lemon
- 1/2 tsp lemon zest, grated
- 1 tbsp honey
- 3 tbsp almonds, coarsely ground
- 1 tbsp raisins or currants, finely chopped
- 1 tbsp poppy seeds, ground
- 1/2 tsp cinnamon
- 1 tsp vanilla sugar
- 1 tsp rum
- 1 tbsp semolina

Preparation:
- Place the breadcrumbs in a bowl, mix well with the egg yolk and milk and set aside
- Cut the apples into very small cubes with the skin on and stir in the lemon juice
- Heat the honey in a small pan. Add the almonds, raisins and poppy seeds and mix well. Add the apple cubes, lemon juice and 2 tbsp water to the pan
- Simmer the apple mixture for a few minutes. Season with cinnamon, lemon zest and rum
- Add the apple mixture to the breadcrumb mixture and stir well
- Beat the egg whites with the vanilla sugar until stiff and fold into the mixture with the semolina
- Allow to rest for 15 minutes, then roll into small dumplings
- Cook the dumplings in gently boiling water for 10 minutes
- Serve the dumplings with apple sauce on a vanilla yoghurt mirror.
