Recipe | Apple strudel dumplings

Recipe from the South Tyrolean farmers

Ingredients:

  •     150 - 200g breadcrumbs, coarsely ground
  •     2 egg yolks and 2 egg whites
  •     1 tbsp milk
  •     150g apples (approx. 1.5 apples)
  •     2 tbsp water
  •     juice of half a lemon
  •     1/2 tsp lemon zest, grated
  •     1 tbsp honey
  •     3 tbsp almonds, coarsely ground
  •     1 tbsp raisins or currants, finely chopped
  •     1 tbsp poppy seeds, ground
  •     1/2 tsp cinnamon
  •     1 tsp vanilla sugar
  •     1 tsp rum
  •     1 tbsp semolina

Preparation:

  •     Place the breadcrumbs in a bowl, mix well with the egg yolk and milk and set aside
  •     Cut the apples into very small cubes with the skin on and stir in the lemon juice
  •     Heat the honey in a small pan. Add the almonds, raisins and poppy seeds and mix well. Add the apple cubes, lemon juice and 2 tbsp water to the pan
  •     Simmer the apple mixture for a few minutes. Season with cinnamon, lemon zest and rum
  •     Add the apple mixture to the breadcrumb mixture and stir well
  •     Beat the egg whites with the vanilla sugar until stiff and fold into the mixture with the semolina
  •     Allow to rest for 15 minutes, then roll into small dumplings
  •     Cook the dumplings in gently boiling water for 10 minutes
  •     Serve the dumplings with apple sauce on a vanilla yoghurt mirror.
