The Überetsch and its tagliatelle
Überetsch tagliatelle is a traditional specialty from the Überetsch region and is closely linked to the history of regional cuisine.
It became particularly famous at the Marklhof, an inn that was considered the home of this dish for many generations. Here, the recipe was passed down and preserved by cooks, so that the Überetscher Nudel became an integral part of the regional food culture. The chefs at the Marklhof, who cooked with great dedication, played a decisive role in ensuring that this dish was not only preserved over the years, but also became increasingly important.

In recent years, the Überetsch tagliatelle has regained recognition, especially thanks to the renowned star chef Herbert Hintner. He put the dish on the menu at Gasthaus Platzegg as “in memorian Marklhof”, paying tribute to the culinary heritage of the Marklhof and its chefs, who have shaped this dish over the years. An important part of this heritage is the “Marklhof - Bellavista” bus, in which over 60 traditional recipes have been collected. A special feature of the Überetscher pasta is its preparation. In winter, it is traditionally served with beans and G'selchtem (smoked meat), while different variations are created throughout the year.
