Strauben of the farmers' wives of Eppan
Recipe
Strauben are a traditional sweet pastry in South Tyrol that everyone must try.
Ingredients for 4 servings
200g flour
250ml milk
2 eggs
4 tablespoons sugar
1 teaspoon baking powder
1 teaspoon vanilla sugar
1 tablespoon rum
a pinch of salt
a little lemon zest
a "sip" of beer
Preparation
Separate the eggs and mix all the ingredients except the egg whites and the beer until smooth. Then add a little beer.
Beat the egg whites until stiff and slowly fold into the mixture.
Pour the batter into a funnel and spiral it into the hot fat. As soon as the bunches are golden brown on the underside, turn them over and finish baking.
Then drain the bunches on kitchen paper. Sprinkle with icing sugar and serve with cranberries.

Tips from the farmers
- The alcohol can also be omitted. It is added to the dough so that it does not absorb so much fat during baking.
- If you don't have a funnel, just use a normal funnel and close the hole at the bottom when filling the dough. Lift the funnel over the fat, remove your fingers and let the batter flow into the oil.
